Red Lentil Dahl Recipe

Here's a soup recipe that is one of my favorites.

Red Lentil Dahl

1 tbsp coconut oil
1 large onion
3 or more cloves garlic
1 inch piece or more of ginger

1 tsp turmeric
1 tsp coriander
1 tsp cumin
1/2 tsp cinnamon
1/2 tsp cardamom
1/4 tsp smoked paprika
1/8 tsp cayenne
Himalayan sea salt

1 cup red lentils
4 cups water

Saute onion in coconut oil until sweating. Add ginger and garlic and continue to saute until soft. Add spices and let toast for 2 minutes then add lentils and water. Bring to a boil then lower the heat to simmer until lentils are completely soft. Salt to taste. Enjoy!
